The coffee
Santa Rosa from Honduras, single origin, 100 % Arabica, organically grown. The green coffee comes from a women's cooperative. Roasted at miró in Zurich, processed at Ale & Bread in the Aktienmühle in Basel — all in Switzerland, all by hand.
Cold brew instead of hot
The coffee is extracted cold, not poured hot. Cold water pulls fewer bitter compounds and less acidity out of the bean: what stays is the roast without the edges hot coffee brings with it. Extraction takes time instead of temperature. Carrying it is grain alcohol of the best quality — neutral, so the coffee stays in front and not the alcohol.
Deliberately low on sugar
A coffee liqueur is often built on its sugar. Here the coffee carries it. That changes the work in the glass: the liqueur brings sweetness and roast, but less sweetness than usual — an Espresso Martini needs no sugar syrup alongside it, but it does need a properly pulled espresso.
How we serve it
Neat over ice. In an Espresso Martini with Davos Vodka and fresh espresso. And with half a centilitre of Kirsch de Bâle: its hint of bitter almond settles underneath the roasted coffee instead of beside it.
