Cold water pulls fewer bitter compounds and less acidity out of the bean: what stays is the roast without the edges hot coffee brings with it. Extraction takes time instead of temperature. Carrying it is grain alcohol of the best quality — neutral, so the coffee stays in front and not the alcohol.\u003c\/p\u003e\n\n\u003cp\u003e\u003cstrong\u003eMuscovado instead of white sugar\u003c\/strong\u003e\u003cbr\u003e\nA coffee liqueur is often built on its sugar. Here the coffee carries it. We sweeten with muscovado, unrefined cane sugar in which the molasses stays in the sugar instead of being spun out. White sugar brings sweetness and nothing else. Muscovado brings sweetness and a dark, faintly liquorice note that sits under the roasted coffee.
